Caprese Salad on a Stick
Keep this quick and easy recipe on hand the next time your friend asks you to bring an appetizer. They're delicious, and have a nutrition profile to feel good about.
- 1 pint grape tomatoes
- 1 cup mini mozzarella balls, marinated
- 16 small basil leaves
- 1 tbsp balsamic glaze
Wash tomatoes and drain.
Using cocktail toothpicks, skewer a tomato, basil leave, mozzarella ball, and another tomato onto the pick.
Arrange on a platter. If you used plain mozzarella, drizzle 2 teaspoons of olive oil evenly over platter.
Drizzle evenly with balsamic glaze. Serve.
