These high fiber waffles elevate your favorite peanut butter and jelly sandwich. Make a double batch and freeze them for up to 3 months, and they’ll be ready to step in for bread for any favorite sandwich.

Ingredients
2/3cupFiber One™ Original Cereal
1/3cupall-purpose flour
1/4teaspoonbaking powder
1large egg
1/3cuplow fat milk
2tbspPeanut Butter
2tspMixed berry Jam
Instructions
Using a food processor, grind Fiber One™ cereal. Pulse your food processor for 10-second intervals until cereal is a course powder.
Transfer the ground cereal into a bowl. Add the flour and baking powder. Stir until dry ingredients are well blended.
Add the egg and milk. Stir until smooth.
Heat waffle iron (I used a 4-waffle iron to make 4 small 3-inch waffles. Or you can make 2 regular waffles). When it’s hot, spoon a dollop of batter equally onto each waffle grid. Press and cook according to your iron’s directions.
Remove waffles from iron and allow to cool.
Spread the peanut butter onto two small waffles and spread the jam on the other two halves.
Place waffles together to create two small sandwiches.
