Six Quick Banana Muffins
This recipe makes 6 muffins, and uses just 2 overripe bananas. Including cooking time, they only take about a half an hour to make.
- 2 bananas, overripe
- 1/4 cup granulated sugar
- 1 egg
- 1/4 cup canola or avocado oil
- 1/2 tsp pure vanilla extract
- 1/2 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp ground cinnamon
- 2 TB mini chocolate chips optional
Preheat oven to 350 F. Spray 6-muffin tin with cooking spray.
Peel bananas, place into a medium mixing bowl. Smash bananas with a fork, and stir until mashed completely.
Add sugar to the bananas and stir well
Add egg to banana mixture, stir and combine.
Add oil and vanilla extract to banana mixture and stir well.
Measure flours into a medium bowl. Add the salt, baking powder and cinnamon. Mix dry ingredients with a whisk to combine, then add to banana mixture. Stir gently until dry mixture is just combined.
Spoon batter evenly into 6 muffin pan. Sprinkle tops with chocolate chips (if desired). Bake for 20-22 minutes until lightly browned.
