This quick and easy recipe from Zero Waste Cooking For Dummies® uses canned or leftover cooked salmon. These make a quick lunch or dinner and can be made ahead and frozen. Heat them in a low (250F) oven or microwave.

6ouncesalmoncooked or canned
1/2cupbread crumbsdivided
1tspdried dill
1eggbeaten
1tspdijon mustard
1lemonhalved
Ground black pepper and salt to taste
2tspvegetable oil
Instructions
Mix the salmon, 1/4 cup bread crumbs, dill, egg, mustard, pepper and salt into a bowl. Zest some of the lemon into the bowl. Cut the lemon and juice half of it into the mixture. Combine all ingredients and mix well.
Form into 2 large or 4 small patties. Place remaining bread crumbs on a small plate and dredge each patty through them to coat both sides.
Heat a large nonstick skillet over medium heat. Add the oil, and when hot, add the patties. Adjust heat if needed. Cook the patties for 3-4 minutes per side, then flip and brown the other side for 3 minutes, or until lightly browned.
Transfer to platter and serve with lemon wedges. You can top a salad with these or make a sandwich or wrap using whole grain bread or tortilla.
Notes
Optional add-ins: In Step 1, add leftover corn, black beans, or cooked spinach.Pile the veggies on your salmon cake sandwich - slices tomatoes, spinach - whatever you like!
